Pumpkin Muffin Recipe

As I mentioned in the post a few days ago on the benefits of pumpkin, it’s a great source of fiber and nutrients for us as well as our pets.
I found this recipe some time ago in the Hungry Girl Cookbook by Lisa Lillien. She calls these Yum Yum Brownie Muffins. They are really easy to make, only two ingredients and they are low in calories! Check them out:
Yum Yum Brownie Muffins
Ingredients:
1 15 oz. of pumpkin (be sure to use pure pumpkin, not the pumpkin pie mix)
1 box of Devil’s Food cake mix (you can use other flavors, I tried making these with a spice cake mix and they were REALLY yummy! Whatever flavor you use, be sure the cake mix is one of the “moist” ones)
Preheat oven to 400 degrees.
Pour can of pumpkin and cake mix into bowl, DO NOT add any other ingredients. Mix the pumpkin and cake mix together (mixture will be pretty thick).
Put mixture into 12-cup muffin pan (use muffin papers or spray pan with non-stick spray before adding mix).
Bake for 20 minutes.
